Sea Bass with Cherry Tomato Sauce

Wine Pairing: Erath Pinot Gris

Ingredients: (serves 4)


1 tablespoon extra virgin olive oil
4 garlic cloves, minced
2 cups cherry or grape tomatoes, cut in half
1-2 tablespoons lemon juice
¼ cup Erath Pinot Gris
¼ cup fresh chopped parsley or basil
1-1.5 pounds Chilean sea bass, cut into 4 filets
1 teaspoon salt
½ teaspoon black pepper
1 tablespoon butter

Instructions

Heat oil in a skillet over medium heat. Once hot, add the garlic cloves and cook for 1 minute until fragrant.

Add the cherry tomatoes, lemon juice, wine and salt and pepper.

Cook over medium heat until the tomatoes start to burst. Add in the herbs.

Meanwhile heat butter in a cast iron skillet over medium-high heat. Once melted, add the fish skin side down and cook for 5 minutes. Flip and cook for another 4-5 minutes.

Using a potato masher, carefully squish or mash the tomatoes until they burst and turn into a sauce. Remove from the heat.

Serve the fish topped with the tomato sauce and your favorite sides.
