BLT Tortellini Pasta Salad

Ingredients
- 8 ounces crispy bacon, crumbled
- 16 ounces fresh or frozen cheese tortellini
- 1-pint cherry or grape tomatoes, cut in half
- 2 cups romaine lettuce, cut into thin strips
- ½ cup red onion, finely diced
- 1 large avocado, diced
- 2 tablespoons fresh chives, chopped
- 1 cup low-fat Greek yogurt
- ¼ cup olive oil
- 1 tablespoon lemon juice
- 1 teaspoon Dijon mustard
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 tablespoon fresh chives, chopped
- 1 tablespoon fresh parsley, chopped
- Salt and pepper to taste
Instructions
Cook the tortellini in a large pot, according to package instructions until al dente. Drain and rinse it under cold water then transfer it to a large mixing bowl.
While the tortellini is cooking, combine the dressing ingredients in a large measuring cup or small bowl and whisk to combine.
Add tomatoes, lettuce, red onion, avocado and chives to the bowl.
Pour the dressing over the salad and toss to combine. Serve and enjoy!
